Homemade McChicken Sandwich

1. Prepare Chicken Patties: If using full chicken breasts, slice them lengthwise to create two thinner patties. Season the chicken patties with 1/2 tsp salt, 1/2 tsp garlic powder, and 1/2 tsp onion powder.
2. Prepare Breading: In a shallow dish, combine 1/2 cup crushed cornflakes (or panko breadcrumbs), 1 tbsp parmesan cheese, 1/2 tsp salt, 1/2 tsp pepper, 1/2 tsp paprika, 1/2 tsp garlic powder, and 1/2 tsp onion powder. Mix well.
3. Bread Chicken: Dredge each chicken patty thoroughly in the breadcrumb mixture, ensuring it is fully coated. Lightly spray or brush the coated patties with 1/2 tsp olive oil.
4. Cook Chicken: Bake the chicken patties in a preheated oven at 450F for 10 minutes, or air fry at 400F for 8 minutes, until golden brown and cooked through.
5. Prepare Sauce: While the chicken cooks, prepare the sauce. In a small bowl, combine 2 tbsp light mayo, 1 tsp mustard, 1/4 tsp onion powder, and optionally 1/2 tsp of any sweetener. Mix until smooth.
6. Assemble Sandwich: Toast the burger buns if desired. Spread the prepared sauce generously on both halves of each bun. Place a layer of shredded lettuce on the bottom bun, top with a cooked chicken patty, and then cover with the top bun.
